Is parduasa d’arrascottu

Inauguriamo la nostra nuova rubrica “Le vostre ricette in tavola” con uno dei dolci tra i più famosi della cucina tradizionale sarda: “Is parduasa”.
Dolce simbolo delle festività, “Is parduasa” possono essere di ricotta (“arrascottu”) o di pecorino fresco. Piccole deliziose tortine dal sapore delicato e difficili da dimenticare una volta assaggiate.
Confesso che non sono esattamente portata nella preparazione dei dolci, ma inaspettatamente seguendo la ricetta che mi è stata data molto gentilmente dalla Signora Cesira, devo confessare che non me la sono cavata mica male. Dato che ci sono riuscita io, immagino cosa possano fare un paio di mani esperte! Provare per credere!!

Ingredienti:

Per la farcia:

1 cestino di ricotta di pecora (1,2 kg circa) freschissima
2 uova intere
100 g di farina
2 bustine di lievito per dolci
2 bustine di vanillina
1 bustina di zafferano
250 g di zucchero
la buccia grattugiata di una arancia non trattata

Per la sfoglia:

500 g di farina
1 cucchiaio colmo di strutto
acqua e sale quanto basta

Dopo aver tenuto la ricotta per due giorni in frigorifero a scolare, metterla in un contenitore per poterla lavorare con una forchetta e renderla cremosa. Aggiungere lo zucchero, la vanillina, lo zafferano, la buccia d’arancia, le uova, la farina ed infine il lievito. Amalgamare con cura evitando di formare grumi.
Disporre su un piano la farina a fontana. Aggiungere un pizzico di sale e lo strutto a fiocchetti. Iniziare a lavorare l’impasto con le mani aggiungendo man mano un pò d’acqua (il necessario per poterla lavorare).
Spianare successivamente l’impasto con il mattarello fino ad ottenere una sfoglia sottile. Coppare la sfoglia con un coppa pasta e formare tanti dischetti (circa 8 cm di diametro). Distribuire una cucchiaiata di farcia, e con le mani formare dei pizzichi sulla sfoglia per darle la forma di un cestino. Spolverate su ciascuna pardula un pò di zucchero. Continuate fino ad ultimare gli ingredienti.
Cuocere in forno preriscaldato a 180°C per circa 15-20 minuti.
Far raffreddare e servire.

We inaugurate our new section "Le vostre ricette in tavola" with one of the dessert among the most famous traditional Sardinian cuisine: "Is parduasa". 
Dessert symbol of the holidays, "Is parduasa" can be ricotta ("arrascottu") or fresh pecorino cheese. Delicious small cakes with a delicate flavor and hard to forget once tasted. I confess that I'm not good for the preparation of desserts, but unexpectedly following the recipe that was given to me very kindly by Mrs Cesira, I must confess that the desserts were very good. Given that I had successful I guess what they can do a couple of experienced hands! Trying is believing!


Ingredients:


For the filling: 

1 basket of fresh ricotta (about 1.2 kg) 
2 whole eggs 
100 g of flour 
2 sachets of baking powder  (about 32 g) 
2 packets of vanilla (about 1 g)
1 sachet of saffron 
250 g of sugar 
grated rind of one orange untreated 

For the pastry: 

500 g of flour 
1 heaping tablespoonful of lard 
water and salt to taste

After kept the ricotta in the refrigerator for two days to drain, put it in a bowl to be able to work it with a fork and make it creamy. Add sugar, vanilla, saffron, orange peel, eggs, flour and finally the yeast. Stir with very care to avoid lumps.
On a clean surface, sift the flour and to make a well. Add a pinch of salt and lard in flakes. Start working the dough with your hands gradually adding a little water (the necessary to be able to work).
Roll out the dough with a rolling pin until to obtain a thin sheet. Cut the dough with a pastry cutter and form many disks (about 8 cm of diameter). Distribute a spoonful of stuffing, and form with your hands of the pinches on the pastry to give it the shape of a basket. Sprinkle on each pardula some sugar. Continue until you finish the ingredients.
Bake in preheated oven at 180 ° C for about 15-20 minutes.
Let cool and serve.
